Cuban Meatloaf recipe - How to Make Pulpeta Cubana


Cuban meatloaf pulpeta

Unlike traditional American meatloaf made in the oven, Cuban pulpeta is prepared on the stove.  The other big difference is that pulpeta is usually cooked with hard boiled eggs on the inside, though very few Cubans will remember how that tradition started.

  • Cook Time: 55 minutes

  • Total Time: 1 hour 15 minutes

Meatloaf Ingredients:


3/4 lb. ground beef
1/4 lb. ground cooked ham (or deviled ham)
4 eggs
3 boiled eggs (shells removed)
1/8 tsp. salt
1/4 tsp pepper
1 tsp oregano
1 tsp cumin
1 tbsp. minced garlic

1 yellow onion, diced
1 3/4 cups cracker meal
20 olives w/ pimiento
2 tbsp olive oil


Sauce Ingredients:

1/2 tsp minced garlic
1/4 tsp oregano
1/4 tsp ground bay leaves
2 tbsp tomato sauce
1/2 cup white wine


Preparation Instructions:

Mix the beef and ham together. Add two beaten eggs, salt, pepper, oregano, cumin, garlic and onion, then mix well. Add enough cracker meal to make the meat hold its shape (about 3/4 cup), and form the mixture into a large loaf.

Open the loaf by cutting it across . Place the three hard boiled eggs end to end down the center of the loaf. On one side of the eggs, push an olive down about a half inch into the meat. Repeat this until you have about 10 olives in a line pushed down into the loaf along one side of the eggs. Then do the same for the the meat on the other side of the eggs.


Close the loaf tightly, roll the loaf in the other two beaten eggs and then the cracker meal. Repeat this process three times or until all the cracker meal has been used. In a large skillet over medium high heat, brown the loaf on all sides (not just top and bottom). Reduce heat to low.


In a bowl, mix the sauce ingredients. Pour the sauce over the loaf, and cook on low heat for at least 45 minutes. Spoon the sauce over the meat occasionally, and turn the loaf over halfway through cooking. Once the loaf is done cooking, remove from heat and allow to cool before slicing and serving. Serves 4-6.
