Helado de Galleticas de Maria (Maria
Cookies with Ice Cream recipe)

This is an ice cream that was served quite often at our home.
Galleticas de Maria is a not-too-sweet flat cookie that comes in
rolls. If you can't find them, use Lorna Doones instead, or you can
also use a shortbread cookie.
1 can sweet condensed milk
1 can evaporated milk
1/2 roll of Galleticas de Maria (about 12 or so thin cookies)
Crush the cookies in a food processor or place between sheets of wax
paper and roll it with a heavy rolling pin. You want some pieces,
not fine crumbs.
Mix the two canned milks well, incorporating the evaporated milk
into the sweet condensed a little at a time, whisking away after
each addition. Add the cookies and mix well.
Pour into an ice tray, without the cube dividers, or into a straight
sided dish and freeze; or you can follow the manufacturer's
directions on your favorite ice cream maker.
This can be doubled easily to fit the quart ice cream makers.
